THE ART OF SUSHI

If you have ever watched a sushi chef cut and assemble sushi, you've probably been amazed at how quickly they work. Though preparing sushi may seem like a daunting task, in this hands-on workshop, Chef David Plankenhorn will teach you step-by-step instructions that will have you making sushi for all of your friends and family in no time. After a brief introduction to Japanese culture and the history of sushi, you will learn how to make maki (roll with nori), uramaki (inside out roll), temaki (cone roll), and nigiri (rice ball) using ingredients such as shrimp, crab, tuna and tofu. About Chef Marc Alfano: In 2003 Marc and Christina Alfano opened their first restaurant, Alfano's Uptown in Washington, PA. After much success, they decided it was time to expand their business. In 2005, they opened Alfano's at the Quail, an upscale restaurant offering an exquisite dining experience in the historic Quail mansion in Washington, PA. Now, in April of 2009, Marc and Christina are fully embracing the "farm-to-table" perspective of fine dining for their restaurant in which they will only use products from independent purveyors to ensure the best quality foods. Alfano's at the Quail continues to draw in customers from all around the world, and is known for its reputable cuisine and service.
Marc Alfano has been fortunate to train under some of the top chefs in the United States. While attending a VIP Chefs gathering in Washington D.C. in March of 2008, Alfano met a handful of renowned chefs and discussed unpaid apprenticeships with them. After completing extensive applications, Marc was invited to stage (French for "to train under") at three of the nations finest restaurants. He spent a week in New York City at Daniels with Chef Daniel Boulud, and a week in Chicago at Charlie Trotters.
In the beginning of October, Alfano traveled to Yountville, California, in the Napa Valley region, and completed a five week stage with award winning Chef Thomas Keller of The French Laundry. Restaurant Magazine named Chef Keller the "4th Best Chef in the World" in 2008. Marc was honored to work for such a talented and acclaimed chef, and has since been implementing his new knowledge, recipes and techniques at his own restaurant.
Marc Alfano has won various awards for his unique and creative cuisine. The experience he offers is available at his fine dining restaurant on Thursday, Friday, and Saturday evenings. The chef offers a "prix-fixe" tasting menu, which features seasonal ingredients strictly farm-to-table. Sundays, Mondays, and Tuesdays are reserved for private parties. On Wednesday evenings the chef and his wife host cooking classes, wine dinners, and other special events.
